Ingredients

Dressing:
  • 1 ripe avocado
  • 1/3 cup Greek yogurt
  • 3 tablespoons fresh mixed herbs such as dill, parsley and/or basil
  • 2 tablespoons avocado oil
  • 2 to 4 tablespoons water
  • 1 tablespoon Einstein Bros. Bagels Avocado Toast Seasoning Blend
  • 1 green onion, coarsely chopped
  • 1 tablespoon lime juice

 

Salad:
  • 2 cups cooked chicken
  • 2 cups mixed greens
  • 2 cups chopped cucumber
  • 2 cups halved cherry tomatoes
  • 2 cups chickpeas, rinsed and drained

Directions

For dressing:
  1. Scoop avocado flesh and place in blender or food processor.
  2. Add yogurt, herbs, avocado oil, water, Einstein Bros. Bagels Avocado Toast Seasoning Blend, lime juice, and green onion. Blend until smooth.
  3. If dressing is too thick add additional water until desired consistency.

 

For salad:
  1. Divide ingredients among 4 bowls.
  2. Top with dressing.

Tips

Extra dressing can be stored up to 1 week in refrigerator.

Use less water for a thicker dressing that can be used as a dip or sandwich spread.
