Ingredients

  • 2 to 3 tablespoons Einstein Bros. Bagels Avocado Toast Seasoning Blend, plus additional for serving
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice
  • 1 ¼ pounds extra large shrimp, peeled and deveined
  • 1 large red bell pepper, sliced
  • 1 ½ cups fresh pineapple chunks
  • 8 Ortega® 6-inch flour tortillas, warmed
  • Guacamole, queso fresco, chopped green onion and lime wedges, for serving (optional)

Directions

  1. Preheat oven to 425°F.  Combine Einstein Bros. Bagels Avocado Toast Seasoning Blend with oil and lime juice in a small bowl.  Add shrimp and toss to coat. Let stand 5 minutes.
  2. Meanwhile, arrange bell pepper and pineapple on parchment lined baking sheet.  Top with shrimp mixture.
  3. Bake 15 minutes or until shrimp turn pink and peppers are tender-crisp.
  4. Spread tortillas with guacamole then top with shrimp mixture, queso fresco and green onion.  Sprinkle with additional Seasoning Blend if desired.
