Ingredients

  • 1 ¼ cups flour
  • 1/3 cup Girl Scout Thin Mints™ Seasoning Blend
  • 4 teaspoons baking powder
  • ¾ teaspoon salt
  • 1 ¼ cups milk
  • 1 egg, lightly beaten
  • 3 tablespoons butter, melted
  • 1 cup mini chocolate chips, plus additional for serving
  • Chocolate sauce, for serving

Directions

Girl Scout Thin Mints™ Whipped Cream:

  1. 1 cup heavy cream, chilled
  2. 3 tablespoons Girl Scouts Thin Mints™ Seasoning Blend

Girl Scout Thin Mints™ whipped cream:

  1. Add heavy cream and Girl Scout Thin Mints™ Seasoning Blend to a large bowl and beat with electric mixture just until stiff peaks form.  Do not overbeat.

Pancakes:

  1. Combine flour, Girl Scout Thin Mints™ Seasoning Blend, baking powder and salt in large bowl.
  2. Combine milk, egg and melted butter.  Stir into flour mixture until just combined.
  3. Grease or spray nonstick skillet or griddle.  Preheat over medium heat. Pour batter by ¼ cupfuls into hot skillet.
  4. Cook 3 minutes or until edges are dry.  Turn pancakes and cook 3 to 4 minutes or until golden.  Repeat with remaining batter.
  5. Top pancakes with Thin Mints whipped cream and mini chocolate chips and drizzle with chocolate sauce.
